Foundation Cake

  • 1/2 cup shortening
  • 1/2 teaspoon vanilla
  • 1 1/2 cups sugar
  • 2 well-beaten egg yolks
  • 3 cups sifted flour
  • 4 tsp baking powder
  • 1/2 tsp salt
  • 1 cup milk
  • 2 beaten egg whites

Cream shortening, vanilla, and sugar together until light and fluffly.  Continue creaming while adding yolks slowly.  Sift flour, baking powder, and salt together and add alternately with milk to creamed mixture.  Beat in the dry ingredients.  Fold in beaten egg whites.  Turn into lightly greased pan. For a layer cake, bake in moderate oven (365 F.)  25 minutes.  For a loaf cake bake in 325 F. oven 40 to 45 minutes.
